One of the things I really loved about writing When They Met Again–a friends-to-something more, second-chance romance–was the group of grandmothers who are part of the story. They all have a special recipe–following is Elaine’s. She’s the bishop’s wife and the grandmother of twins who are friends of Joanna, who is the protagonist of the story. Elaine is also a bit of a gossip–but don’t worry, she has a character arc that deals with that.
She’s also known for her delicious cornbread. Her recipe is below, but first here’s a quote from the story:
Adam took a bite of the cornbread. “Elaine must have a secret ingredient for this too. It’s delicious.” This time it was Lu who dropped her voice. “Sour cream—it was a secret. Elaine wrote down Greek yogurt when she shared the recipe, but we figured it out.”
Here’s the recipe!

Elaine’s Cornbread
Ingredients:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup sour cream
- 1/2 cup milk
- 1/4 cup melted butter
- 2 large eggs
Instructions:
1. Heat oven to 400°F. Lightly grease an 8-inch square pan.
2. Whisk together the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
3. Combine the sour cream, milk, melted butter, and eggs in a second bowl. Stir until the mixture is smooth.
4. Pour the wet mixture into the dry. Stir gently until just combined; don’t over mix.
5. Pour the batter into the prepared pan. Bake for 20–25 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
6. Cool and serve.
Look for two more recipes from When They Met Again on Tuesdays over the next two weeks! The book is available now at all of your favorite book places–Amazon, Barnes & Noble, and Christianbook. (If you’re local library doesn’t carry it, ask if they can order it!)
Happy cooking! And reading!
