
I saved the best for last in my series of recipes inspired by food in my latest release, When They Met Again. This one is for peach cobbler, one of my favorite desserts and one I love to make! I loved “giving” the recipe to Mammi Lu in the story. You can make this with fresh peaches (best results, of course) but it’s also delicious with canned peaches and makes for a delicious off-season treat. (Make sure and drain the liquid from the canned peaches.)
Here’s the mention of the cobbler in the story:
Joanna picked at her cobbler. It wasn’t quite as delicious as when Mammi Lu made it, but it was still good. Mammi’s secret ingredient was vanilla.
Here’s the recipe:
Mammi Lu’s Peach Cobbler
Filling:
- 6 cups chopped peaches (if using canned, drain all liquid)
- 1/4 cup all-purpose flour
- 1/2 cup sugar
- Pinch of salt
- 1 tablespoon lemon juice
- 1 1/2 teaspoons pure vanilla extract
Topping:
- 1/2 cup packed brown sugar
- 2/3 cup all-purpose flour
- 1 teaspoon cinnamon
- Pinch of salt
- 1/2 cup cold salted butter, cubed
- 2/3 cup old-fashioned whole rolled oats (quick works)
- Optional: 2/3 cup chopped walnuts
Instructions:
Preheat oven to 350 degrees. Lightly grease a 9×9 inch pan.
Filling:
Mix ingredients together in a bowl and then spread into baking dish.
Topping:
Whisk the brown sugar, flour, cinnamon, and salt together in a bowl. Cut in the butter. Fold in the oats and walnuts (if using). Spread evenly over filling.
Bake 40 to 50 minutes until golden brown. Serve warm with vanilla ice cream or whip cream.
